Meatloaf Cupcakes with Whipped Potato Topping

1 lb. ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup ketchup
1/4 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
2 cups mashed potatoes, whipped until creamy
Chopped chives for garnish
Preheat your oven to 375°F (190°C).
In a bowl, mix together the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper.
Press the meat mixture into muffin tins, filling each cup to the top.
Bake in the preheated oven for about 20-25 minutes, or until the meatloaf is cooked through.
While the meatloafs bake, whip the mashed potatoes until they’re light and fluffy.
Once the meatloafs are done, let them cool slightly and then remove them from the tins.
Pipe the whipped potatoes on top of each meatloaf cupcake using a piping bag with a star tip.
Garnish with chopped chives and serve warm.
