Loaded Mediterranean Flatbread with Whipped Feta & Fresh Herbs
Ingredients:
- 2 naan or flatbreads
- 1 cup feta cheese
- 3 tbsp Greek yogurt
- 1 tbsp olive oil (plus extra for brushing)
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ cup Kalamata olives, sliced
- ¼ red onion, thinly sliced
- 1 small roasted red pepper, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Salt & black pepper, to taste
Directions:
Preheat oven to 200°C (400°F). Place flatbreads on a baking sheet and lightly brush with olive oil. Bake for 5–6 minutes until slightly crisp.
In a food processor, blend feta, Greek yogurt, and olive oil until smooth and creamy.
Spread the whipped feta evenly over the warm flatbreads.
Top with cherry tomatoes, cucumber, olives, red onion, and roasted red pepper.
Sprinkle with parsley and dill, then season with salt and pepper to taste.
Slice and serve immediately.
