Air Fryer KFC Chicken
Easy to produce, very crispy, and tasty KFC chicken done in an air fryer with a lot less oil.

Ingredients
- two cups of buttermilk
- Four skin-on, boneless chicken thighs
- Four skin-on, bone-in chicken legs
- 1/4 cup of flour for all purposes
- half a cup of potato starch
- A half-tsp of paprika smoked
- 1/2 tsp. powdered garlic
- One teaspoon of chili powder
- One teaspoon of onion powder
- 1 teaspoon dried oregano
- 1/4 tsp white pepper, 1 tsp dried thyme
- 1/2 teaspoon powdered mustard
- Two teaspoons of kosher salt
- (Optional) 2 tsp nutritional yeast
- spritz flaky salt with avocado oil (for topping)
DIRECTIONS
- Add the buttermilk into a big basin. Place the chunks of chicken on top, cover with plastic wrap, and leave overnight.
- In a sizable baking dish or bowl, mix the flour, salt, nutritional yeast (if using), and all of the spices together before cooking.
- After taking the chicken out of the refrigerator, add roughly 1/4 cup of the buttermilk to the flour mixture and stir to blend it in. This gives the chicken some craggily portions.
- If you’re going to make the bone-in chicken legs, start with those. Get the air fryer ready. After removing the legs, coat each one completely with flour, tapping off any excess.
- Achieve 370ºF in the air fryer. Once the chicken legs are in the basket, thoroughly spray.
- Achieve 370ºF in the air fryer. Fill the basket with the chicken legs and generously mist with oil. Bake for 22 to 24 minutes, monitoring at the halfway point to determine if any dry or floury areas need to be coated with extra oil. The pieces don’t need to be flipped.
- To make cleanup easier, place a wire rack over a baking sheet that has been lined with parchment paper. If you are making extra chicken, remove the legs, immediately sprinkle flaky salt on top, lay on the wire rack, and place in the oven on the lowest temperature to keep warm.
- Use the same method as for the legs to prepare the thighs, then put them in the air fryer. Bake for 15 minutes at 350°F, checking halfway through to spritz any dry or floury areas.
