Zucchini Fritters in a Pan
These golden zucchini fritters are quick to whip up and taste like a warm hug from the garden. Crisp on the outside, tender on the inside, and perfect for any time of day.
Ingredients:
450 g zucchini, grated
Salt, to taste
Black pepper, to taste
½ tsp dried oregano
2 eggs
3 tbsp flour
2–3 tbsp vegetable oil (for frying)
Grate zucchini and lightly salt it, then let sit for 10 minutes.
Squeeze out excess liquid using a clean towel or your hands.
In a large bowl, combine zucchini, eggs, flour, oregano, salt, and pepper.
Mix until you have a thick, even batter.
Heat vegetable oil in a nonstick pan over medium heat.
Spoon batter into the pan, flatten slightly with a spatula.
Cook for 3–4 minutes per side, until golden and crisp.
Drain briefly on paper towels and serve warm.
