Zucchini Clouds:

 

Ingredients:

– 2 medium zucchinis, grated

– 1 cup of shredded cheese (cheddar or mozzarella works well)

– 2 large eggs

– 1/2 cup of all-purpose flour (or almond flour for a gluten-free option)

– 1 teaspoon of baking powder

– 1 teaspoon of garlic powder (optional)

– Salt and pepper to taste

– Fresh herbs (like parsley or chives) for garnish (optional)

Instructions:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the grated zucchini with a pinch of salt and let it sit for about 10 minutes. This will help release excess moisture.

3. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.

4. In another bowl, mix the squeezed zucchini with the shredded cheese, eggs, flour, baking powder, garlic powder (if using), salt, and pepper. Stir until well combined.

5. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, forming small mounds.

6. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden and firm to the touch.

7. Remove from the oven and let them cool slightly before serving. Garnish with fresh herbs if desired.
