Ingredients:

  • 1 cup of water
  • 1/2 cup oatmeal
  • 1 pinch of salt

Filling (optional):

  • 2 beaten eggs
  • Tomato slices (to taste)
  • Shredded and seasoned chicken (to taste)

Preparation method:

Blend the three initial ingredients (water, oat flour and salt) in a blender or with a mixer until you obtain a homogeneous dough.

Heat a frying pan over low or medium heat and grease with a drizzle of olive oil, spreading it evenly.

Place a portion of the batter in the pan and let it cook until firm. When it is consistent, flip the pancake to brown the other side.

This recipe makes approximately two to three pancakes, depending on the thickness.

For the filling, use the same frying pan. Add a dash of olive oil (always on low heat), add some tomato slices and the beaten eggs with a pinch of salt. Let the eggs start to cook.

Then add the shredded chicken over the eggs and, on top, the ready-made oatmeal pancake.
