Ingredients (1 loaf or 8-inch round):
1 cup plain yogurt (Greek or regular, unsweetened)
2 large eggs
¼ cup honey or pure maple syrup (adjust to taste)
¼ cup olive oil (or melted coconut oil)
1 tsp vanilla extract
1 ½ cups all-purpose flour (or whole wheat for healthier option)
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
Zest of 1 lemon or orange (optional, for flavor)
Instructions:
Preheat oven
Set oven to 350°F (175°C). Grease and line a loaf pan or round cake pan with parchment paper.
Mix wet ingredients
In a large bowl, whisk yogurt, eggs, honey, oil, and vanilla until smooth.
Add dry ingredients
In another bowl, combine flour, baking powder, baking soda, salt, and zest.
Gently fold into the wet mixture until just combined (don’t overmix).
Bake
Pour batter into prepared pan.
Bake for 30–35 minutes (loaf may take 40–45 minutes), until a toothpick inserted comes out clean.
Cool & serve
Let cake cool in the pan for 10 minutes, then transfer to a rack.
Serve plain, or with a drizzle of honey, yogurt topping, or fresh fruit.
Tips:
For extra moistness, replace 2 tbsp of flour with almond flour.
For a chocolate version, add 2 tbsp unsweetened cocoa powder.
This cake keeps well for 3–4 days in an airtight container at room temperature.
