Have you ever been munching on a salty, crunchy snack on a relaxing Friday night, only to be jolted back to reality by the carb count? Listen up, fellow onion ring fans: I feel you. That is why I embarked on a mission to get all that tasty, crunchy perfection without going against our low-carb commitment. My homemade Low Carb Cheesy Onion Ring Chips have saved the day on snacky days. This dish allows us to enjoy without feeling guilty, born from a passion for comfort food and a desire for healthier solutions. These delicious treats are a lifesaver for anybody on the ketogenic diet, attempting to decrease carbohydrates, or just trying to eat better.
You may pair these bad guys with refreshing salads or cold dips. They pair well with herb-infused Greek yogurt dips or tangy ranch dressings. If you’re in the mood for something fancier, pair them with some grilled chicken or steak that’s juicy and seasoned with lemon. The potential is limitless!
Mini Cheesy Onion Rings with Few Carbs
Go for Low Carb if you want extra servings: Approximate serving size: 4
What you need:
two big onions, quarter-inch slices
paprika, 1 teaspoon (or 1 cup) and almond flour, 1 cup
– 1/2 teaspoon of powdered garlic
For an extra kick, add 1/4 teaspoon of cayenne pepper.
2 big beaten eggs-Salt and pepper to taste
two cups of grated cheese (cheddar, mozzarella, or both)
Follow these steps:
1. Line a baking sheet with parchment paper and set your oven to 400°F, or 200°C.
2. Cut the onion pieces into thin discs.
In a shallow bowl, combine the almond flour, paprika, garlic powder, cayenne pepper, salt, and pepper.
4. Beat the eggs well in a separate shallow bowl.
Scatter the almond flour mixture over each onion disk after dipping them in the egg wash; let any excess egg wash to drop off.
Put the coated onion discs on the baking sheet that you made earlier, being sure to leave some space between each disc.
7. Evenly coat each disc with shredded cheese, being sure to scatter the cheese over the onions instead of letting it fall to the baking sheet.
Once the cheese begins to bubble and become a golden brown color, bake for another 12 to 15 minutes.
Nine. After the onion rings have cooled for a few minutes, use a spatula to remove them off the baking pan.
Substitute almond flour with low-carb flour of your choice if you’re short on time; however, since coconut flour is quite absorbent, you may need to use less of it than almond flour.
– Parmesan adds a pleasant sharpness, and spicy pepper jack adds a zesty twist; you may even use other cheeses to get other tastes.
– Incorporate a teaspoon of Italian spice into the almond flour mixture to impart a hint of herbiness to your onion discs.
– If you’re short on time on weeknights, but still want onion discs, you may prepare them in advance, put them on a baking sheet, and then bake them when you’re ready. Holy cow, such a lifesaver!
– Also, keep a watch on the onion ring chips to make sure they don’t brown too quickly; every oven is somewhat different. They’re at their most delicious when eaten hot and crunchy from the oven!
Enjoy your munching without worrying about the amount of carbohydrates in your diet, my friends!
