Returning home to the scent of a freshly prepared meal feels like a warm hug; it’s truly heartwarming! My Slow Cooker Broccoli and Beef takes center stage in this scenario. Traditional Chinese stir-fry often becomes our choice for takeout and served as the muse for this recipe. However, let’s face it: there are moments when life becomes too hectic for stir-frying. Thanks to the convenience of a slow cooker, you can effortlessly create this delectable dish, featuring tender beef and vibrant broccoli. It’s tasty, simple, and ideal for weeknights; your slow cooker will be in action!

A serving of fluffy white rice perfectly complements this classic slow cooker beef and broccoli dish. It never disappoints. If you’re watching your carbs, consider pairing it with cauliflower rice or zucchini noodles for a veggie-rich option. For a restaurant-like finish, garnish with sliced green onions and sesame seeds.

Cook on low for 4 hours or until the beef is tender.

About 30 minutes before serving, whisk together cornstarch and water in a small bowl. Stir this mixture into the slow cooker to thicken the sauce.

Add the broccoli florets to the slow cooker. Continue cooking on low for an additional 30 minutes or until the broccoli is cooked to your liking.

If desired, garnish with sliced green onions and toasted sesame seeds. Serve over white rice.

Tips and Variations:

Convenience: Use frozen broccoli florets as a time-saving alternative.

Sweetness Level: Adjust the brown sugar to suit your taste. For a less sweet version, reduce the sugar or add more if needed.

Protein Choices: While I prefer beef chuck roast, flank steak or pre-cut stir-fry beef can also be used.

Spicy Twist: For added heat, consider topping with sriracha or red pepper flakes for a delightful kick.

Veggie Options: Not a fan of broccoli? Substitute with baby carrots, bell peppers, or snap peas for a vegetarian twist.

A thoughtfully planned dinner that practically prepares itself while you’re conquering the day is the perfect end to a busy day. If you’re looking to eat well despite a packed schedule, this Slow Cooker Broccoli and Beef is a shining example of set-it-and-forget-it simplicity. Now, kick back, relax, and savor the free time you’ve reclaimed!
