Ultimate Herb Butter Chicken with Creamy Mash & Sweet Carrots

Main Plate:
Pan-seared chicken thighs or breasts 

Buttery mashed potatoes 

Glazed whole carrots 

Fresh parsley for garnish 

For the Herb Butter Sauce:
Minced garlic 

Butter 

Dijon or whole grain mustard
Chicken stock 

Heavy cream 

Fresh or dried herbs (like thyme, rosemary, parsley)
Salt & black pepper

Sear the chicken in a hot pan until golden brown and cooked through. Set aside. In the same pan, melt butter, sauté garlic, then stir in mustard, chicken stock, cream, and herbs. Let it simmer until it thickens into a creamy herb sauce. Meanwhile, boil and mash the potatoes with butter and seasoning. Roast or pan-glaze carrots until soft and caramelized. Assemble the plate with a generous scoop of mash, tender carrots, and chicken covered in sauce. Top with parsley and serve warm.

Try using honey mustard for a sweeter sauce twist. Swap carrots for green beans or roasted root vegetables. This dish also works great with turkey!
