Ingredients:
– 1 leek, sliced
– 3 carrots, peeled and chopped
– 4 potatoes, peeled and diced
– 1 red paprika, sliced
– 4 eggs
– 50g/1.76oz spinach
– Green onions, chopped
– Dill and parsley, chopped
– Salt to taste
– 4 tbsp olive oil
– 4 tbsp flour
– 1 tsp baking powder
Directions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large bowl, mix together the leek, carrots, potatoes, red paprika, spinach, green onions, dill, and parsley.
3. In a separate bowl, beat the eggs and then add them to the vegetable mixture.
4. Stir in the salt, olive oil, flour, and baking powder until well combined.
5. Pour the mixture into the greased baking dish and spread it out evenly.
6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the vegetables are cooked through.
7. Serve hot and enjoy!
