Summer Peach Cake

Cake Batter:
1½ cups all-purpose flour
½ cup granulated sugar
2 large eggs
½ cup unsalted butter, softened
½ cup sour cream
1 tsp vanilla extract
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup canned peaches, drained and chopped
Peach Glaze:
½ cup powdered sugar
2–3 tbsp peach juice (from canned peaches) Instructions
Preheat Oven:
Preheat to 350°F (175°C). Grease and flour a bundt pan or a 9-inch round pan.
Mix Dry Ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
Cream Butter & Sugar:
In a large bowl, beat the butter and granulated sugar until light and fluffy (3–5 minutes).
Add Eggs & Vanilla:
Beat in the eggs one at a time, then mix in vanilla extract.
Combine Wet & Dry:
Add the flour mixture in batches, alternating with sour cream. Start and end with the dry mix. Mix until just combined—do not overmix.
Fold in Peaches:
Gently fold in the chopped peaches to distribute evenly.
Bake:
Pour the batter into your prepared pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean.
Cool:
Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
Glaze:
In a small bowl, whisk together powdered sugar and peach juice until smooth. Drizzle over the cooled cake.
