Sugar-Free & Flour-Free Chocolate Oat Bars

Ingredients:

  • 2 cups rolled oats
  • 1 cup chopped nuts (almonds, walnuts, or peanuts)
  • ½ cup natural peanut butter or almond butter
  • ¼ cup honey or sugar-free syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil
  • ½ cup dark chocolate (sugar-free), melted
  • ¼ teaspoon salt

Instructions:

  1. Prepare the Base

    • In a bowl, mix oats, nuts, and salt.
    • Heat peanut butter, honey (or syrup), coconut oil, and vanilla in a saucepan over low heat until combined.
  2. Combine & Press

    • Pour the wet mixture over the oats and nuts, stirring well.
    • Press the mixture into a lined baking dish.
  3. Chocolate Topping

    • Melt dark chocolate and spread it evenly over the oat mixture.
  4. Set & Serve

    • Refrigerate for at least 1 hour until firm.
    • Slice into bars and enjoy!
