Introduction
These Stuffed Mashed Potato Nests combine buttery mashed potatoes with melted cheese, herbs, and a delicious filling (you can use vegetables, chicken, or mushrooms).
Shaped like little nests and baked until golden, they’re soft and fluffy inside but crisp around the edges. A perfect addition to dinner, brunch, or festive spreads!
Ingredients
For the Mashed Potato Base:

4 medium potatoes, peeled and cubed

2 tbsp butter
-
¼ cup milk or cream
-
¼ cup shredded mozzarella or cheddar cheese
-
1 egg yolk (for creaminess and structure)

Salt and pepper to taste

1 tbsp chopped parsley or chives (optional)
For the Filling (Choose One or Mix & Match):
Option 1 – Cheesy Veggie Filling:

½ cup chopped spinach (lightly sautéed)

¼ cup corn kernels
-
¼ cup diced bell peppers
-
¼ cup shredded mozzarella or cream cheese
Option 2 – Chicken & Cheese Filling:

½ cup cooked shredded chicken

1 tbsp mayonnaise or cream cheese
-
1 tbsp chopped onions (sautéed)
-
Salt, pepper, and chili flakes to taste
Option 3 – Mushroom Filling (Vegetarian):

½ cup finely chopped mushrooms

1 small garlic clove, minced
-
1 tbsp butter
-
1 tbsp cream or milk
-
Salt and black pepper to taste
Optional Toppings:

Instructions
1. Prepare the Mashed Potatoes

Boil potatoes in salted water for 10–12 minutes until soft.

Drain and mash until smooth.

Stir in butter, milk, cheese, egg yolk, salt, pepper, and parsley.

Mix until creamy and slightly firm (not runny).
2. Prepare the Filling
Choose your filling:
For Veggie or Mushroom Filling:

Sauté ingredients in a small pan with butter until tender.

Mix with cheese or cream cheese until creamy.
For Chicken Filling:

Mix cooked shredded chicken with mayo, onions, salt, pepper, and chili flakes.
Set aside.
3. Shape the Potato Nests

Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.

Using a spoon or piping bag, form small mounds of mashed potatoes on the tray.

Use the back of a spoon to press the center and create a “nest” or well in each mound.
4. Fill and Bake

Spoon your chosen filling into the center of each potato nest.

Sprinkle a little extra cheese on top if desired.

Bake for 15–20 minutes, or until golden brown and crisp on the edges.
5. Serve Warm
