Instructions

1. Prepare the Mashed Potatoes

  1. Boil potatoes in salted water for 10–12 minutes until soft.

  2. Drain and mash until smooth.

  3. Stir in butter, milk, cheese, egg yolk, salt, pepper, and parsley.

  4. Mix until creamy and slightly firm (not runny).

2. Prepare the Filling

Choose your filling:

For Veggie or Mushroom Filling:

  • Sauté ingredients in a small pan with butter until tender.

  • Mix with cheese or cream cheese until creamy.

For Chicken Filling:

  • Mix cooked shredded chicken with mayo, onions, salt, pepper, and chili flakes.

Set aside.

3. Shape the Potato Nests

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.

  2. Using a spoon or piping bag, form small mounds of mashed potatoes on the tray.

  3. Use the back of a spoon to press the center and create a “nest” or well in each mound.

4. Fill and Bake

  1. Spoon your chosen filling into the center of each potato nest.

  2. Sprinkle a little extra cheese on top if desired.

  3. Bake for 15–20 minutes, or until golden brown and crisp on the edges.

5. Serve Warm

  • Garnish with chopped parsley, chives, or a drizzle of sour cream.

  • Serve hot as an appetizer, side dish, or snack.

Chef’s Tips

  • For extra crispiness, brush the nests with a little melted butter before baking.

  • You can make the mashed potato mixture ahead of time and refrigerate it until ready to shape.

  • Use sweet potatoes for a unique twist — same steps, just a sweeter, healthier version.

  • Add bacon bits or caramelized onions for extra flavor.
