A crispy, cheesy appetizer or snack perfect for parties or lunchboxes.
Ingredients (Makes 6 nests)
3 large potatoes, peeled and cubed
2 tbsp butter
¼ cup milk
½ tsp salt
¼ tsp black pepper
½ cup grated cheddar cheese
1 egg, beaten
½ cup cooked chicken or sautéed vegetables (for stuffing)
2 tbsp chopped green onions (optional)
Cooking spray or a little oil for greasing
Instructions
Boil potatoes until fork-tender (10–15 mins). Drain and mash with butter, milk, salt, and pepper.
Let mash cool slightly, then mix in the egg and half the cheese.
Preheat oven to 400°F (200°C). Grease a muffin tin.
Spoon mashed potatoes into muffin cups, pressing down and up the sides to form a nest shape.
Fill each nest with cooked chicken or veggie mixture.
Sprinkle remaining cheese on top.
Bake for 20–25 minutes until golden and crisp around edges.
Let cool for 5 minutes before removing. Garnish with green onions.
