Ingredients

Strawberry Syrup (for dipping ladyfingers)

  • 2 cups (300 g) fresh strawberries, hulled & chopped

  • ½ cup (100 g) sugar

  • ½ cup (120 ml) water

  • 1 tbsp lemon juice

Cream Layer

  • 1 cup (240 ml) heavy cream, chilled

  • 8 oz (225 g) mascarpone cheese, room temperature

  • ½ cup (60 g) powdered sugar

  • 1 tsp vanilla extract

Assembly

  • 24–28 ladyfinger biscuits (savoiardi)

  • 1–1 ½ cups (150–200 g) fresh strawberries, sliced thin

  • Fresh mint leaves (optional, for garnish)


Step-by-Step Instructions

1️⃣ Make the Strawberry Syrup

  1. In a small saucepan, combine chopped strawberries, sugar, water, and lemon juice.

  2. Bring to a simmer over medium heat and cook for 5–6 minutes until strawberries soften.

  3. Mash lightly with a fork for more flavor.

  4. Strain through a fine mesh sieve, pressing to extract liquid. Discard solids (or save for topping).

  5. Let syrup cool completely.


2️⃣ Prepare the Cream

  1. In a large bowl, whip heavy cream until soft peaks form.

  2. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.

  3. Fold whipped cream gently into the mascarpone mixture until fully combined and airy.


3️⃣ Assemble the Tiramisu

  1. Briefly dip each ladyfinger into the cooled strawberry syrup (1–2 seconds per side — don’t oversoak).

  2. Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish.

  3. Spread half the cream mixture evenly over the ladyfingers.

  4. Add a layer of sliced strawberries.

  5. Repeat with remaining ladyfingers, cream, and strawberries.

4️⃣ Chill & Serve

  • Cover with plastic wrap and refrigerate for at least 4 hours (overnight is best for flavor melding).

  • Garnish with extra strawberries and fresh mint just before serving.
