1 cup (240 ml) heavy cream, chilled
-
8 oz (225 g) mascarpone cheese, room temperature

½ cup (60 g) powdered sugar
-
1 tsp vanilla extract
Assembly
-
24–28 ladyfinger biscuits (savoiardi)
-
1–1 ½ cups (150–200 g) fresh strawberries, sliced thin
-
Fresh mint leaves (optional, for garnish)
Step-by-Step Instructions
1️⃣ Make the Strawberry Syrup
-
In a small saucepan, combine chopped strawberries, sugar, water, and lemon juice.
-
Bring to a simmer over medium heat and cook for 5–6 minutes until strawberries soften.
-
Mash lightly with a fork for more flavor.
-
Strain through a fine mesh sieve, pressing to extract liquid. Discard solids (or save for topping).
-
Let syrup cool completely.
2️⃣ Prepare the Cream
-
In a large bowl, whip heavy cream until soft peaks form.
-
In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
-
Fold whipped cream gently into the mascarpone mixture until fully combined and airy.
3️⃣ Assemble the Tiramisu
-
Briefly dip each ladyfinger into the cooled strawberry syrup (1–2 seconds per side — don’t oversoak).
-
Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish.
-
Spread half the cream mixture evenly over the ladyfingers.
-
Add a layer of sliced strawberries.
-
Repeat with remaining ladyfingers, cream, and strawberries.
4️⃣ Chill & Serve
-
Cover with plastic wrap and refrigerate for at least 4 hours (overnight is best for flavor melding).
-
Garnish with extra strawberries and fresh mint just before serving.
