Prep time: 20 minutes (plus chilling time)

Ingredients:

Crust:

15 Oreo cookies, crushed (filling removed or left in, as desired)
2 tablespoons melted butter
Cheesecake Filling:

8 ounces cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla extract
1 cup strawberry puree (from fresh or frozen strawberries)
Pink food coloring (optional)
Strawberry Layer:

1 pint fresh strawberries, sliced
Whipped Cream:

1 cup heavy cream
2 tablespoons powdered sugar
Garnish:

Oreo cookies, halved
Chocolate shavings
Instructions:

Prepare Crust:

Combine crushed Oreo cookies and melted butter in a bowl. Mix well.
Press the mixture firmly into the bottom of individual serving cups or glasses.
Make Cheesecake Filling:

Beat cream cheese and sugar until smooth.
Stir in vanilla extract and strawberry puree. Add pink food coloring if desired.
Assemble Cups:

Layer the cheesecake filling over the Oreo crust in each cup.
Add a layer of sliced strawberries on top of the cheesecake filling.
Chill for at least 2 hours to allow the cheesecake filling to set.
Make Whipped Cream:

Beat heavy cream and powdered sugar until stiff peaks form.
Garnish and Serve:

Top each cup with a swirl of whipped cream.
Garnish with halved Oreo cookies and chocolate shavings.
Serve chilled.
