Steak with Caramelized Onions and Mashed Potatoes
Ingredients:
For the Steak:
2 ribeye or sirloin steaks
Salt & black pepper to taste
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, smashed
Fresh rosemary or thyme (optional)
For the Caramelized Onions:
2 large yellow onions, thinly sliced
1 tbsp butter
1 tbsp olive oil
Pinch of salt
1/2 tsp sugar (optional, helps with browning)
1 tbsp balsamic vinegar (optional, for depth)
For the Mashed Potatoes:
2 lbs potatoes, peeled and cubed
4 tbsp butter
1/2 cup milk or cream
Salt & pepper to taste
Optional: garlic powder or roasted garlic
Instructions:
Make the Mashed Potatoes:
Boil potatoes in salted water until fork-tender (about 15–20 mins). Drain, mash with butter and milk, season to taste. Keep warm.
Caramelize the Onions:
In a skillet over medium-low heat, melt butter with olive oil. Add onions, a pinch of salt, and optional sugar. Stir occasionally for 25–30 minutes until deep golden. Add balsamic vinegar at the end if using.
Cook the Steak:
Pat steaks dry. Season generously with salt and pepper.
Heat oil in a skillet over high heat. Sear steak 3–4 mins per side for medium-rare. Add butter, garlic, and herbs during the last minute, spooning butter over the steak. Rest 5 mins before slicing.
Plate It Up:
Spoon mashed potatoes onto plate, top with sliced steak, and finish with a mound of caramelized onions.
