Ingredients:

1 sheet puff pastry (thawed if frozen)

200g (7 oz) fresh spinach (or 150g frozen, thawed & squeezed dry)

150g (5 oz) feta cheese, crumbled

1 small onion, finely chopped

1 clove garlic, minced

1 tbsp olive oil

1 egg (for sealing + egg wash)

Pinch of nutmeg (optional, for flavor)

Salt & black pepper to taste

Sesame seeds or nigella seeds (for topping, optional)
Directions:

Prepare the Filling

Heat olive oil in a pan, sauté onion until soft.

Add garlic and cook for 1 minute.

Stir in spinach and cook until wilted (if using fresh). Let cool slightly.

Mix with crumbled feta cheese, nutmeg, salt & pepper.

Prepare the Pastry

Roll out puff pastry sheet on a lightly floured surface.

Spread the spinach-feta mixture evenly over the pastry.

Shape the Rolls

Roll up the pastry sheet tightly like a log.

Brush the edge with beaten egg to seal.

Slice into even rolls (about 1 inch thick).

Bake

Place rolls on a baking tray lined with parchment.

Brush tops with beaten egg, sprinkle sesame or nigella seeds.

Bake in a preheated oven at 200°C (400°F) for 20–25 minutes, until golden and puffed.
