Ingredients:
Dough:

3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
1 cup warm water
Filling:
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
4 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 teaspoon ground cumin
Salt and black pepper to taste

Directions:

Prepare the Dough:
In a large bowl, mix the flour and salt.
Make a well in the center and add the olive oil and warm water.
Mix until a dough forms, then knead for about 10 minutes until smooth.
Cover with a damp cloth and let rest for 30 minutes.
Prepare the Filling:
Heat the olive oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent.
Add the garlic and cook for another minute.
Add the chopped spinach to the pan and cook until wilted.
Season with ground cumin, salt, and black pepper.
Remove from heat and stir in the crumbled feta cheese.
Allow the filling to cool slightly.
Assemble the Gozleme:
Divide the dough into 6 equal portions.
On a floured surface, roll out each portion into a thin circle or rectangle.
Place a portion of the spinach and feta filling on one half of the dough, then fold the other half over to enclose the filling.
Press the edges to seal.
Cook the Gozleme:
Heat a large skillet or griddle over medium heat.
Cook each gozleme for 2-3 minutes on each side, or until golden brown and crisp.
Serve:
Serve warm, optionally with a squeeze of lemon juice.
