Ingredients
– 300g fresh spinach, chopped
– 3 tbsp olive oil
– 3 cloves garlic, minced
– 1 egg (for filling)
– Salt, to taste
– ½ tsp black pepper, freshly ground
– 250g ricotta cheese
– ½ cup mozzarella cheese, shredded
– ½ cup Parmesan cheese, grated
– 1 puff pastry sheet
– 1 egg, beaten with 1 tbsp milk (for egg wash)
– Sesame seeds (optional, for sprinkling)
Directions:
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
3. Add the chopped spinach and cook until wilted. Remove from heat and let cool.
4. In a bowl, mix together the ricotta, mozzarella, Parmesan, salt, pepper, and 1 beaten egg.
5. Unroll the puff pastry sheet on a lightly floured surface. Spread the cheese mixture evenly over the pastry, leaving a border around the edges.
6. Top the cheese mixture with the cooked spinach. Roll up the pastry tightly and seal the edge.
7. Cut the roll into slices and place them on the prepared baking sheet. Brush with the egg wash and sprinkle with sesame seeds.
8. Bake for 25-30 minutes or until the pastry is golden brown and crisp.
9. Serve the spinach and feta cheese puff pastry rolls warm and enjoy!
Tips:
– You can add some chopped sun-dried tomatoes or olives for extra flavor.
– Make sure to squeeze out any excess liquid from the cooked spinach to prevent the pastry from becoming soggy.
– These puff pastry rolls can be stored in an airtight container in the refrigerator and reheated in the oven before serving.
