Spinach and Cheese Puff Pastry Squares

Ingredients:

  • 2 sheets of puff pastry (thawed if frozen)
  • 1 ½ cups spinach (chopped and cooked, excess water squeezed out)
  • 1 cup ricotta cheese (or feta for stronger flavor)
  • ½ cup mozzarella cheese, shredded
  • 1 egg (for egg wash + 1 extra for the filling)
  • Salt and pepper to taste
  • Optional: Sesame seeds for topping

Instructions:

Preheat oven to 375°F (190°C).

In a bowl, mix spinach, cheeses, 1 egg, salt & pepper until combined.

Roll out one puff pastry sheet on baking paper.

Spread the spinach-cheese mixture evenly on it, leaving space around edges.

Cover with the second puff pastry sheet, press edges with a fork to seal.

Cut into square portions using a knife

Brush the to with egg wash (1 beaten egg)

Sprinkle sesame seeds on top(optional)

Baked for 25-30 minutes or until gold and puffed

Let cool slightly, then serve warm.
