Soft and Moist Banana Bread Recipe (Without a Mixer)

This easy banana bread recipe is perfect for beginners and doesn’t require a mixer! The combination of overripe bananas, brown sugar, and oil (or butter) makes this banana bread incredibly soft, moist, and delicious.

Ingredients:

  • 3 overripe bananas (mashed)

  • 2 large eggs (room temperature)

  • ½ cup vegetable oil (or melted butter)

  • ¾ cup brown sugar (for added moisture)

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions:

  1. Preheat the Oven :
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

  2. Prepare the Bananas :
    Mash the 3 overripe bananas in a large mixing bowl using a fork or potato masher until smooth. The riper the bananas, the sweeter and more flavorful your banana bread will be!

  3. Mix Wet Ingredients :
    Add the 2 large eggs (room temperature), ½ cup vegetable oil (or melted butter), ¾ cup brown sugar, and 1 teaspoon vanilla extract to the mashed bananas. Whisk the mixture well until it’s fully combined.

  4. Prepare Dry Ingredients :
    In a separate bowl, combine 1 ½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Mix the dry ingredients thoroughly.

  5. Combine Wet and Dry Ingredients :
    Gradually add the dry ingredients to the wet banana mixture. Stir gently with a spatula or spoon until just combined. Be careful not to over-mix, as this can make the bread dense.

  6. Optional Add-ins :
    If you want to make your banana bread extra special, fold in ½ cup chopped walnuts or chocolate chips at this stage.

  7. Bake ⏲️:
    Pour the batter into the prepared loaf pan. Use a spatula to smooth the top. Place the pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool :
    Once baked, remove the banana bread from the oven. Let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
