Savory Garlic Mushroom Chicken with Spinach
Ingredients
For the Chicken:
- 2 large chicken breasts, halved horizontally (or 4 small chicken breasts)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil
For the Garlic Mushroom Sauce:
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup (150g) mushrooms, sliced
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
½ cup (120ml) chicken broth
1 cup (240ml) heavy cream
½ cup (50g) grated Parmesan cheese
2 cups (60g) fresh spinach
½ teaspoon red pepper flakes (optional)
For Garnish (Optional):
- Fresh parsley, chopped
- Extra Parmesan cheese
Instructions
Step 1: Prepare the Chicken
Season the chicken breasts with salt, pepper, and paprika on both sides.
Heat olive oil in a large skillet over medium-high heat.
Cook the chicken for 5-7 minutes per side, until golden brown and cooked through.
Remove the chicken from the pan and set aside.
Step 2: Make the Sauce
In the same skillet, melt butter over medium heat.
Add garlic and cook for 30 seconds until fragrant.
Add mushrooms and thyme, cooking for 5 minutes until the mushrooms are soft.
Pour in the chicken broth, scraping the bottom of the pan to deglaze.
Reduce the heat and stir in heavy cream and Parmesan cheese.
Let the sauce simmer for 3-4 minutes until slightly thickened.
Add the spinach, stirring until wilted.
If desired, add red pepper flakes for extra heat.
Step 3: Combine and Serve
Return the cooked chicken to the pan, spooning the sauce over it.
Let it simmer for 2 minutes to absorb flavors.
Garnish with chopped parsley and extra Parmesan before serving.
