Ingredients:
-
1 kg eggplants (preferably small-sized)
-
200 g sliced cooked ham
-
200 g sliced cheese (any melting cheese like mozzarella, provolone, or gouda)
-
100 g homemade or store-bought tomato sauce
-
3 free-range eggs
-
200 ml whole milk
-
50 g grated Parmesan cheese
-
Dried oregano, to taste
-
Dried basil, to taste
-
Extra virgin olive oil, for grilling
-
Salt and ground black pepper, to taste
Preparation Instructions:
Step 1: Prepare the Eggplants
-
Wash the eggplants thoroughly.
-
Slice into 3 mm rounds.
-
Place slices in a bowl of salted water and cover with a plate or weight to keep submerged. Let soak for 20 minutes to reduce bitterness.
-
Drain and pat dry with a clean towel or paper towel.
Step 2: Grill the Eggplants
-
Heat a drizzle of olive oil in a large frying pan.
-
Grill the slices on both sides until golden. To save time, use two pans at once.
-
Set aside on a paper towel to absorb excess oil.
Step 3: Assemble the Eggplant Cake
-
In a baking dish, arrange the first layer of grilled eggplant slices.
-
Lightly season with salt and black pepper.
-
Spread a portion of tomato sauce and sprinkle with oregano and basil.
-
Add half of the ham slices over the sauce.
-
Layer more eggplants and repeat with sauce, herbs, and cheese slices.
-
Continue layering, finishing with a layer of eggplant on top.
Step 4: Prepare the Egg Custard
-
In a bowl, beat the eggs with the milk.
-
Season lightly with salt and pepper.
-
Pour evenly over the layered eggplants in the baking dish.
-
Sprinkle the grated Parmesan cheese over the top.
Step 5: Bake
-
Preheat oven to 170°C (340°F).
-
Bake for 30–35 minutes, or until the top is golden and the center is set.
-
Check doneness by inserting a knife in the center; it should come out clean.
Step 6: Serve
-
Let the dish rest for 15 minutes before slicing and serving. This helps the layers set and intensifies the flavors.
