Salmon Veggie Patties

Ingredients:

– 2 cans cooked salmon (or 1½ cups)

– ½ cup almond flour/oat bran

– 2 eggs

– ¼ cup chopped bell pepper

– ¼ cup chopped green onions

– 1 tbsp parsley/cilantro

– Lemon juice

– Salt, pepper, garlic powder

 

Instructions:

1. Mix ingredients, shape into patties.

2. Cook in a nonstick pan with olive oil spray over medium heat (~3 min per side).

3. Serve with lemon wedges.
