Roasted Beet & Feta Salad with Orange Dressing

Ingredients:

  • 4 medium beets, trimmed and scrubbed
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted
  • 1 small red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped

Orange Dressing:

  • 1/4 cup fresh orange juice
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt & pepper, to taste

Directions:

Preheat oven to 200°C (400°F). Wrap beets individually in foil, place on a baking sheet, and roast for 45–60 minutes until tender. Let cool, peel, and slice.

In a small jar, whisk together orange juice, olive oil, vinegar, honey, salt, and pepper.

Arrange salad greens on a platter. Top with sliced beets, feta, walnuts, and red onion.

Drizzle with orange dressing and sprinkle with parsley before serving.
