Roasted Asparagus and Cherry Tomatoes with Burrata and Pine Nuts

 

This dish is simple, elegant, and perfect for an Instagram-worthy presentation.

 

Ingredients:

 

  • 1 bunch of fresh asparagus (trimmed)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)
  • 1 ball of fresh burrata cheese
  • 2 tbsp pine nuts (toasted)
  • Fresh basil leaves (for garnish)
  • Balsamic glaze (optional, for drizzling)

 

Instructions

1. Preheat the Oven:

Preheat your oven to 400°F (200°C).

2. Prepare the Vegetables:

Place the asparagus and cherry tomatoes on a baking sheet.

Drizzle with olive oil and sprinkle with salt and pepper.

Toss gently to coat evenly.

3. Roast the Vegetables:

Roast in the oven for 12–15 minutes, or until the asparagus is tender and the tomatoes are slightly blistered.

4. Toast the Pine Nuts:
