Roast Chicken

Ingredients:
1 whole chicken (about 4-5 lbs)
2 tablespoons olive oil
1 lemon, halved
4 garlic cloves, crushed
Fresh thyme, rosemary, and sage (a few sprigs of each)
Salt and pepper to taste
1 cup chicken broth
Directions:
Preheat your oven to 375°F (190°C).
Rinse the chicken inside and out and pat it dry with paper towels.
Rub the chicken all over with olive oil, salt, and pepper.
Stuff the cavity with the lemon halves, garlic, and fresh herbs.
Place the chicken in a roasting pan, breast side up.
Pour the chicken broth into the bottom of the pan.
Roast the chicken for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
Let the chicken rest for 10-15 minutes before carving.
