Ingredients:
- 2 large potatoes (about 1.5 lbs or 700g), starchy potatoes like Russet or Idaho work best
- 1 medium carrot
- 2-3 green onions (scallions)
- 1 large egg
- 3-4 tablespoons all-purpose flour
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- Pinch of paprika (optional, for color and flavor)
- Cooking oil for frying (such as vegetable, canola, or sunflower oil)
Instructions:
- Prepare the Vegetables:
- For the Potatoes: Peel the potatoes. You can either grate them using a box grater or a food processor. For a smoother texture, you can boil and mash them instead. If you grate them, place the grated potatoes in a clean kitchen towel and wring out as much liquid as possible. This is a crucial step to prevent the fritters from becoming soggy.
- For the Carrot: Peel and finely grate the carrot.
- For the Green Onions: Wash and finely chop the green onions, including both the white and green parts.
- Combine the Mixture:
- In a large mixing bowl, combine the grated (or mashed) potatoes, grated carrot, and chopped green onions.
- Add the egg, flour, salt, pepper, and a pinch of paprika (if using).
- Mix everything thoroughly until all the ingredients are well-combined and form a cohesive, thick batter. The mixture should hold its shape when you form it into a patty. If it seems too wet, add another tablespoon of flour.
- Form the Fritters:
- Take a scoop of the mixture (about 1/4 cup) and gently form it into a round, flat patty, similar in shape to a hamburger patty or a small pancake, about 1/2 to 3/4 inch thick.
- Repeat with the remaining mixture, placing the patties on a plate or cutting board.
- Cook the Fritters:
- Heat about 1/4 inch of cooking oil in a large non-stick frying pan or skillet over medium heat. The oil is ready when a small piece of the mixture sizzles immediately upon contact.
- Carefully place the patties into the hot oil, leaving some space between each one to allow them to cook evenly. Do not overcrowd the pan.
- Cook for 4-6 minutes per side, or until the bottom is a deep golden brown and crispy.
- Gently flip the fritters using a spatula and cook the other side for another 4-6 minutes, or until it is also golden brown and crispy. The inside should be cooked through and tender.
- Finish and Serve:
- Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Serve immediately while they are hot and crispy. These fritters are delicious on their own or can be served with a dollop of sour cream, plain yogurt, or your favorite dipping sauce.
