Quick Rigatoni with Tomato Basil Sauce

Ingredients:

  • 400g rigatoni pasta
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 can (800g) whole tomatoes
  • Salt, pepper, (optional: pinch of sugar)
  • Fresh basil, chopped
  • Grated Parmesan (optional)

Steps:

1. Cook rigatoni in salted water. Save some pasta water and drain.

2. Sauté onion in olive oil, then add garlic.

3. Add tomatoes, crush them, season with salt/pepper, and simmer 15 mins.

4. Stir in basil and cooked pasta. Add a splash of pasta water if needed.

5. Serve with Parmesan and more basil on top.
