Quick Cabbage Patties (Fritters) Recipe
Ingredients (Makes 8–10 patties)
3 cups cabbage, finely shredded
1 small onion, finely chopped
2 eggs
½ cup flour (all-purpose) or ½ cup chickpea flour (for gluten-free)
¼ cup fresh coriander or parsley, chopped
2 cloves garlic, minced
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp paprika (optional)
¼ tsp turmeric (optional, for color)
½ tsp baking powder (optional — makes them fluffier)
2–3 tbsp oil for frying

1. Prepare the Vegetables
In a large bowl, add the shredded cabbage and chopped onion.
Add garlic and herbs, and mix well.
2. Make the Batter
Add eggs and mix.
Add flour, baking powder, salt, pepper, paprika, turmeric.
Mix until everything is well combined and forms a thick batter.
(If it’s too wet, add 1–2 tbsp more flour.)
3. Cook the Patties
Heat a nonstick pan on medium heat with a little oil.
Scoop about 2 tbsp of mixture for each patty and flatten gently.
Cook 3–4 minutes per side until golden and crispy.
Repeat until all patties are done.

Add grated carrot or zucchini for extra veggies.
Add ¼ cup cheese (cheddar, mozzarella, or feta) for cheesy patties.
