Ingredients:
For the Apple Filling:
- 5 medium apples (670g, approx. 3 cups, sliced)
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar (40g)
- 1/4 teaspoon ground cinnamon
For the Cake Batter:
- 5 tablespoons butter (100g, softened)
- Pinch of salt
- 5 tablespoons granulated sugar (100g)
- 8g vanilla sugar (approx. 1 1/2 teaspoons)
- 2 medium eggs (each 63g)
- 4g baking powder (approx. 1 teaspoon)
- 400g all-purpose flour (approx. 3 1/4 cups)
- 1 egg yolk (for brushing)
- Powdered sugar, for dusting (optional)
Steps to Prepare:
Prepare the Apple Filling:
- Peel, core, and slice the apples into thin wedges. The number of slices will depend on the size of the apples, but you want to end up with about 3 cups of sliced apples.
- In a large bowl, combine the sliced apples with the lemon juice, granulated sugar, and ground cinnamon. Toss everything together gently to ensure the apples are evenly coated. Let the mixture sit while you prepare the cake batter, allowing the flavors to meld together and the apples to release some of their juice.
Make the Cake Batter:
- Preheat the oven to 180°C (350°F). Grease and flour a round 9-inch cake pan or line it with parchment paper to prevent the cake from sticking.
- In a large mixing bowl, beat the softened butter with the granulated sugar and vanilla sugar until the mixture becomes light and fluffy. This step usually takes about 3-5 minutes, so be patient—it will ensure a light, airy texture in your cake.
