3 medium potatoes

1 onion, sliced or finely chopped

1 carrot, grated

5 cloves garlic, minced

100 g cheese, grated

A bunch of spring onions, chopped

1 egg

Salt, to taste

3 tbsp flour

Sunflower oil, for frying
Instructions

Prepare the potatoes

Peel and grate the potatoes.

Place them in a clean kitchen towel and squeeze out the excess liquid (this helps them crisp up).

Mix the batter

In a large bowl, combine grated potatoes, onion, carrot, garlic, cheese, spring onions, and salt.

Add the egg and flour, mixing until everything binds together into a thick batter.

Heat the oil

Pour sunflower oil into a frying pan (about ½ cm deep) and heat on medium.

Shape & fry

Scoop spoonfuls of the mixture, flatten slightly into patties, and place gently in the hot oil.

Fry for 3–4 minutes per side until golden brown and crispy.

Drain & serve

Transfer fritters to a plate lined with paper towels to remove excess oil.

Serve hot with sour cream, yogurt dip, or even ketchup for a homestyle touch.
