Directions:
1. In a non-stick skillet, heat olive oil over medium heat.

3. Create two wells in the potatoes and crack an egg into each well. Cook for an additional 3-4 minutes, until the egg whites are set but the yolks are still runny.
4. Garnish with fresh parsley and serve hot.
