Potato and ham fritters: a quick and tasty dish

Ingredients

POTATOES 800g (1.8 lbs)
EGGS 2
HAM 100g (3.5 oz)
CHEESE 100g (3.5 oz)
ONION 1/2
FLOUR 50g (1/2 cup)
PARSLEY
SALT
PEPPER
EXTRA VIRGIN OLIVE OIL

Instructions

Grate the potatoes and transfer them to the bowl.

Add the eggs, cooked ham, cheese, onion, parsley, pepper, salt, and flour.

Use a spatula to mix the ingredients well.

Heat the olive oil in a pan over medium heat. Place spoonsful of the mixture in the pan, flattening it slightly.

Fry the fritters on both sides until they are golden brown.
