Peanut Butter and Honey Oat Smoothie

 

This recipe typically makes a thick, filling smoothie perfect for breakfast or a snack.

Ingredients

 

  • cup rolled oats (quick or old-fashioned)
  • to cups almond milk (or milk of your choice, adjust for desired thickness)
  • large banana (preferably frozen in chunks for a thicker, colder smoothie)
  • cup creamy or crunchy peanut butter
  • tablespoons honey (or to taste)
  • Optional: A handful of ice cubes (if banana is not frozen)
  • Optional: teaspoon vanilla extract
  • For garnish (to achieve the look in the photo): Extra honey and peanut butter for drizzling.

  • Blender (high-speed blender is best)

 

Instructions

 

  1. Pulverize the Oats (Recommended): If you don’t want chewy bits of oats in your smoothie, place the cup of rolled oats into the blender first. Blend on high speed until the oats are pulverized into a fine flour-like consistency. If your blender is not strong, you can skip this step or soak the oats (see next step).
  2. Soak the Oats: Pour the cup of almond milk (or milk of your choice) into the blender with the pulverized oats. Let the mixture sit for about 2-3 minutes to allow the oats to soften and absorb some of the liquid. If you did not pulverize the oats, soaking for 5 minutes will help soften them.
  3. Add Remaining Ingredients: Add the frozen banana, peanut butter, and honey (and vanilla extract, if using) to the blender.
  4. Blend: Secure the lid and blend until the smoothie is completely smooth and creamy. If the mixture is too thick for your blender, add the remaining cup of milk, a splash at a time, until the desired consistency is reached.
  5. Adjust Sweetness/Thickness: Taste the smoothie. If you prefer it sweeter, add more honey. If you want it thicker, add a few ice cubes or a little more frozen banana and blend again.
  6. Garnish and Serve (Optional – to match the photo):
    • Take a clean glass and drizzle some extra honey and melted peanut butter down the inside walls.
    • Pour the finished smoothie into the prepared glass.
    • Serve immediately with a straw!
