Oven-Baked Herb Chicken Drumsticks with Roasted Vegetables ️✨

Ingredients:
Chicken:
- Chicken drumsticks
- Olive oil ️
- Garlic cloves, minced
- Paprika, thyme, oregano
- Lemon juice
- Salt & black pepper
Vegetables:
- Potatoes
- Carrots
- Red bell peppers ️
- Sweet potatoes
- Olive oil ️
- Garlic powder
- Fresh parsley
- Salt & pepper
Instructions:
Toss chicken drumsticks with olive oil, minced garlic, paprika, thyme, oregano, lemon juice, salt, and pepper. In a baking dish, mix diced potatoes, carrots, peppers, and sweet potatoes with oil, garlic powder, salt, and pepper. Place seasoned drumsticks on top of the veggies and bake until chicken is golden and cooked through, and vegetables are tender. Garnish with freshly chopped parsley before serving.
Notes: Add chili flakes for spice. Swap drumsticks with thighs or whole legs if preferred.
