Ingredients:
- 6 eggs
- 1 cup milk or half-and-half
- 1/2 cup shredded mozzarella
- 1/2 cup diced tomatoes
- 1/2 cup chopped zucchini
- 1/4 tsp garlic powder
- Salt & pepper to taste
- Olive oil for greasing
Directions:
Preheat oven to 350°F (175°C).
Lightly grease a 9-inch pie dish or oven-safe pan.
In a bowl, whisk eggs, milk, garlic powder, salt, and pepper.
Stir in cheese, tomatoes, and zucchini.
Pour mixture into the greased pan.
Bake for 35–40 minutes, or until center is set.
Cool slightly before serving. Excellent with toast or salad!
