One-Bowl Oatmeal Cookies recipe — perfect for a quick snack with minimal cleanup!
Ingredients (makes about 18–20 cookies):
1/2 cup (1 stick / 113g) unsalted butter, melted
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon (optional but recommended)
1/4 tsp salt
1 1/2 cups old-fashioned rolled oats
Optional: 1/2 cup add-ins (raisins, chocolate chips, chopped nuts, etc.) Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together:
Melted butter
Brown sugar
Granulated sugar
Egg
Vanilla extract
Add flour, baking soda, cinnamon, and salt. Mix until just combined.
Stir in oats and any add-ins (chocolate chips, raisins, etc.).
Scoop dough (about 1.5 tablespoons per cookie) onto the baking sheet, leaving space between each.
Bake for 10–12 minutes, or until edges are golden. Centers may look slightly underdone — they’ll firm up as they cool.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Tips:
For chewier cookies, don’t overbake.
Want them crispier? Bake an extra 1–2 minutes.
You can double the batch and freeze extra dough balls — bake straight from frozen, adding 2–3 minutes to the bake time.
