A wholesome, protein-packed recipe that blends hearty oatmeal, leafy greens, and cheesy goodness for a filling meal. Perfect for breakfast, brunch, or even a light dinner.
Ingredients (Serves 2–3)

1 cup oatmeal (rolled or quick oats)

Chives, finely chopped (about 2 tbsp)

1 cup fresh spinach, chopped

50 g mozzarella cheese, shredded

2 eggs

Salt, to taste

Dry garlic powder, to taste

5 tbsp plain yogurt
-
1 tbsp avocado oil (or olive oil) for cooking
Directions
1. Prepare the Oatmeal Base

In a saucepan, cook oatmeal with water (or milk for creaminess) until soft and porridge-like.

Season lightly with a pinch of salt and set aside.
2. Cook the Spinach & Eggs

Heat avocado oil in a nonstick skillet over medium heat.

Add chopped spinach and sauté for 1–2 minutes until wilted.

Crack in the eggs, season with salt and dry garlic, and scramble gently with the spinach until just set.
3. Combine Everything

Add the cooked oatmeal into the skillet with the spinach-egg mixture.

Stir in chopped chives and half of the shredded mozzarella.

Mix well until creamy and combined.
4. Finish with Cheese & Yogurt

Sprinkle the remaining mozzarella on top and let it melt for 1–2 minutes.

Remove from heat and serve warm with a dollop of yogurt on top.
