Oatmeal & Spinach Breakfast Skillet

A wholesome, protein-packed recipe that blends hearty oatmeal, leafy greens, and cheesy goodness for a filling meal. Perfect for breakfast, brunch, or even a light dinner.


Ingredients (Serves 2–3)

  • 1 cup oatmeal (rolled or quick oats)

  • Chives, finely chopped (about 2 tbsp)

  • 1 cup fresh spinach, chopped

  • 50 g mozzarella cheese, shredded

  • 2 eggs

  • Salt, to taste

  • Dry garlic powder, to taste

  • 5 tbsp plain yogurt

  • 1 tbsp avocado oil (or olive oil) for cooking


‍ Directions

1. Prepare the Oatmeal Base

  • In a saucepan, cook oatmeal with water (or milk for creaminess) until soft and porridge-like.

  • Season lightly with a pinch of salt and set aside.

2. Cook the Spinach & Eggs

  • Heat avocado oil in a nonstick skillet over medium heat.

  • Add chopped spinach and sauté for 1–2 minutes until wilted.

  • Crack in the eggs, season with salt and dry garlic, and scramble gently with the spinach until just set.

3. Combine Everything

  • Add the cooked oatmeal into the skillet with the spinach-egg mixture.

  • Stir in chopped chives and half of the shredded mozzarella.

  • Mix well until creamy and combined.

4. Finish with Cheese & Yogurt

  • Sprinkle the remaining mozzarella on top and let it melt for 1–2 minutes.

  • Remove from heat and serve warm with a dollop of yogurt on top.


Serving Suggestions

  • Serve with avocado slices or fresh cucumber on the side.

  • Add chili flakes or hot sauce if you like a spicy kick.

  • Works great as meal prep—just portion into containers and reheat.
