Ingredients:
Main Ingredients:
-
2 cups old-fashioned oats
-
2 ripe bananas (mashed)
-
½ cup peanut butter (or almond butter)
-
¼ cup honey or maple syrup
-
1 tsp vanilla extract
-
½ tsp cinnamon powder (optional, for warmth and flavor)
-
½ tsp baking soda (for a light texture)
-
A pinch of salt
Optional Add-ins (choose your favorites):
-
¼ cup dark chocolate chips
-
2 tbsp chopped walnuts or pecans
-
2 tbsp raisins or dried cranberries
-
1 tbsp chia seeds or flaxseeds (for extra fiber and crunch)
Instructions:
Step 1: Prep the Base
-
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
-
In a large mixing bowl, mash the ripe bananas until smooth and creamy.
-
Add the peanut butter, honey, and vanilla extract. Stir until well combined.
Step 2: Add the Dry Ingredients
-
Add oats, baking soda, cinnamon, and a pinch of salt to the wet mixture.
-
Mix well until everything is evenly combined. The dough should be slightly sticky but thick enough to hold its shape.
-
If desired, fold in chocolate chips, nuts, or dried fruits.
Step 3: Shape the Cookies
-
Using a spoon, scoop out portions of dough (about 1½ tablespoons each) and place them on the baking sheet.
-
Flatten each cookie slightly with the back of a spoon or your fingers — they won’t spread much while baking.
Step 4: Bake to Perfection
-
Bake for 10–12 minutes, or until the edges are golden brown and the centers are set.
-
Remove from the oven and let the cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
Tips for the Best Oatmeal Cookies:
-
For extra chewiness, use overripe bananas.
-
Add a sprinkle of sea salt on top before baking for a sweet-salty balance.
-
To make them vegan, use maple syrup instead of honey.
-
For a protein boost, stir in a scoop of your favorite protein powder.
Storage:
Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 10 days. You can also freeze them for longer storage — just reheat before serving!
Enjoy:
These Flourless Oatmeal Cookies are naturally sweet, rich in fiber, and perfect for any time of day. Enjoy them with a cup of coffee, as a post-workout snack, or a healthy dessert option!
