Soft, fluffy, and delicately flavored with vanilla and almonds, these muffins hide a gooey surprise inside: a rich spoonful of Nutella! Perfect for breakfast, snacks, or a sweet treat with coffee.

Ingredients (for about 6–8 muffins)

  • 120 g all-purpose flour

  • 50 g almond powder (ground almonds)

  • 50 g sugar

  • 1 sachet (≈ 8 g) baking powder

  • 2 eggs

  • 100 g plain yogurt (plant-based or regular)

  • 1 tsp vanilla extract (or natural vanilla flavoring)

  • ~2 tsp Nutella (or similar spread) per muffin

‍ Instructions

1. Prepare the Batter:

  • Preheat oven to 180°C (350°F).

  • In a bowl, mix flour, almond powder, sugar, and baking powder.

  • In another bowl, whisk eggs, yogurt, and vanilla.

  • Combine wet and dry ingredients, mixing until smooth.

2. Fill the Muffins:

  • Line a muffin tin with paper liners.

  • Spoon about 1 tablespoon of batter into each liner.

  • Add 2 teaspoons of Nutella in the center of each.

  • Cover with more batter until the liners are about ¾ full.

3. Bake:

  • Bake for 18–22 minutes, until golden and a toothpick inserted into the edge (not the Nutella center) comes out clean.

4. Cool & Serve:

  • Let cool slightly before removing from the tin.

  • Serve warm for a molten center, or at room temperature for a fudgy surprise inside.

Tips & Variations:

  • For an extra crunch, sprinkle with chopped hazelnuts before baking.

  • Swap Nutella with peanut butter, Biscoff spread, or jam.

  • Dust with powdered sugar for a bakery-style finish
