Minced Beef and Eggplant
Ingredients:
- 1 lb minced beef
- 2 medium eggplants, diced
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 (14 oz) can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon black pepper
- 1 teaspoon salt
- ½ cup beef broth or water
- 2 tablespoons fresh parsley or cilantro, chopped (optional)
Directions:
Prepare the Eggplant:
Heat 1 tablespoon olive oil in a skillet over medium heat.
Add diced eggplant and cook for 5-7 minutes, stirring occasionally until softened.
Remove and set aside.
Cook the Beef:
In the same skillet, add 1 tablespoon olive oil and sauté onion and garlic until fragrant.
Add minced beef and cook until browned, breaking it up as it cooks.
Combine Ingredients:
Stir in tomato paste, diced tomatoes, paprika, cumin, red pepper flakes, black pepper, and salt.
Pour in beef broth and return the eggplant to the pan.
Simmer:
Reduce heat to low and let simmer for 10-15 minutes, stirring occasionally.
Serve:
Garnish with fresh parsley or cilantro if desired.
