Melt-in-Your-Mouth Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice (about 1 lemon)
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
Instructions:
1. Prepare the Marinade:
In a medium bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, minced garlic, dried thyme, dried rosemary, paprika, onion powder, salt, and pepper.
2. Marinate the Chicken:
Place the chicken breasts in a resealable plastic bag or shallow dish.
Pour the marinade over the chicken, ensuring that all pieces are well-coated.
Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for best results.
3. Preheat the Oven:
Preheat your oven to 375°F (190°C).
4. Bake the Chicken:
Remove the chicken from the marinade and place it in a baking dish.
Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
If you like a bit of caramelization, you can broil the chicken for an additional 2-3 minutes after baking, but watch it closely to prevent burning.
5. Serve:
Let the chicken rest for 5 minutes before slicing or serving.
