Mediterranean Quesadillas with Spinach, Feta, Mozzarella & Red Onion
1f6d2 Ingredients (for 4 quesadillas)
4 large flour tortillas (whole wheat or regular)
1 cup fresh spinach, chopped
1/2 cup red onion, thinly sliced
1/2 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 tbsp olive oil (for cooking)
1/2 tsp dried oregano (optional)
Salt & black pepper, to taste
‍ Instructions
Prepare the filling – In a bowl, mix together spinach, red onion, feta, mozzarella, oregano, salt, and pepper.
Assemble – Place a tortilla on a flat surface. Spread about 1/4 of the mixture evenly over half of the tortilla, then fold it in half to form a semicircle. Repeat with remaining tortillas.
Cook – Heat a skillet over medium heat and brush lightly with olive oil. Cook each quesadilla for 2–3 minutes per side until golden brown and the cheese melts.
Cut & Serve – Slice into wedges and serve hot with a side of Greek yogurt, tzatziki, or tomato salsa.
