Mediterranean Lobster Pasta Salad
Ingredients:
- 16 oz cooked lobster meat (from tails or whole lobster), chopped
- 8 oz short pasta (like orzo, penne, or fusilli)
- 1/2 cup celery, finely chopped (with leaves)
- 1/3 cup light mayonnaise
- 1/4 cup 0% Greek yogurt
- 1/4 cup fresh chives, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 1/4 cup diced cucumber
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice (plus zest, optional)
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper, to taste
- Fresh parsley or dill, for garnish
Instructions:
1. Cook the Pasta:
Boil pasta in salted water according to package directions until al dente. Drain and rinse with cold water to stop the cooking. Let cool completely.
2. Make the Dressing:
In a bowl, whisk together mayonnaise, Greek yogurt, olive oil, lemon juice, mustard, garlic, salt, and pepper.
3. Combine Salad:
In a large bowl, combine cooked pasta, lobster meat, celery, chives, cherry tomatoes, olives, and cucumber. Pour dressing over the top and toss gently to coat everything evenly.
4. Chill:
Cover and refrigerate for at least 30 minutes to let flavors meld.
5. Garnish & Serve:
Sprinkle with fresh parsley or dill before serving. Optionally drizzle with more olive oil or a squeeze of lemon.
