Ingredients:
For the Meatballs
- Ground lamb (or beef)
- Olive oil
- Onion, finely minced
- Garlic, minced
- Fresh parsley, chopped
- Dried oregano
- Ground cumin
- Salt & pepper
- For the Tzatziki Sauce
- Greek yogurt
- Cucumber, grated
- Garlic, minced
- Lemon juice
- Olive oil
- Fresh dill, chopped
- Salt & pepper
For Serving
- Cooked basmati rice (plain or turmeric-spiced)
- Cherry tomatoes, halved
- Red onion, thinly sliced
- Cucumber slice
- Fresh dill, chopped
Instructions:
Mix ground lamb with onion, garlic, parsley, oregano, cumin, salt, and pepper. Shape into meatballs and pan-fry in olive oil until browned and cooked through. For tzatziki, combine yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Serve meatballs over rice with tomatoes, onions, cucumber, and a generous drizzle of tzatziki, garnished with extra dill.
Notes/Variations: Replace lamb with chicken or turkey for a lighter option, or serve with warm pita instead of rice.
