Mediterranean Cucumber & Cottage Cheese Wraps
Light, protein-rich, and full of Mediterranean flavor—ready in 5 minutes!
Ingredients (for 1 wrap):
- 1 whole wheat tortilla or Mediterranean-style flatbread (lavash or pita)
- ½ cup cottage cheese
- ¼ cup cucumber slices, thinly sliced (preferably Persian or English cucumber)
- 1 tbsp chopped fresh dill (or use parsley or mint)
- Zest of ½ lemon
- 1 tsp extra virgin olive oil
- Cracked black pepper, to taste
- Optional: pinch of za’atar or sumac for a bold Mediterranean finish
Optional: sliced cherry tomatoes or Kalamata olives for added flavor
To Make:
1. Warm the Flatbread (Optional):
Lightly warm the tortilla or flatbread in a pan or microwave for a few seconds to make it more pliable.
2. Spread the Base:
Evenly spread ½ cup of cottage cheese over the surface of the flatbread, leaving a small border around the edges.
3. Add Veggies & Herbs:
Layer with thin cucumber slices, sprinkle with fresh dill, and add optional cherry tomatoes or olives if using.
4. Season:
Add lemon zest, a drizzle of olive oil, and season with cracked black pepper. If you like, add a pinch of za’atar or sumac for a herby, tangy Mediterranean twist.
5. Roll & Slice:
Roll the wrap tightly. Slice in half on a diagonal and serve immediately.
