Mediterranean Chickpea Salad Recipe
Ingredients:
For the salad:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/2 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
For the dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
1. Prepare the salad:
In a large bowl, combine chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
2. Make the dressing:
In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
3. Toss the salad:
Pour the dressing over the salad and toss gently to coat everything evenly.
4. Add the finishing touch:
Sprinkle crumbled feta on top and serve immediately or chill for 15-20 minutes for flavors to meld.
